Fruity Veggie Couscous Salad

I had an amazing couscous salad at Houston's Restaurant. Then I tried another one at J. Alexander's. Then I looked up recipes online...and this is what I've created. If you like some ingredients more than others, increase the amount - that's what made this salad so delicious - it's very 'customizable'! Makes for a great side or appetizer, or even a light meal.


 



Salad Ingredients:
  • 1 to 2 cups medium couscous
  • 1 diced granny smith apple
  • 1/4 cup dried cherries
  • 1/4 cup dried golden raisins
  • 1/8 cup shredded carrots
  • 1/8-1/4 cup diced radishes
  • 1/8 cup finely chopped fresh mint
  • 2 tbsp finely chopped green onions (just the green tips)
  • 1/8 cup chopped almonds (or pine nuts)
Dressing ingredients:
  • 2-3 tbsp fruit juice (apple or a cocktail)
  • 2-3 tbsp lemon juice
  • 1 tbsp honey
Instructions:
  1. Combine honey, fruit juice, and lemon juice - mix - set aside.
  2. Prepare couscous as the package requires (in this case, boil 1 cup water, remove from heat, add couscous, cover and let absorb the liquid - after a couple of minutes, add 1 tspn olive oil to separate the grains.)
  3. In a large bowl, combine couscous, fruits, veggies and nuts.
  4. Pour dressing over salad and mix well
  5. Enjoy!
