Pizzas

I started getting really creative with different ingredients for pizzas. Pre-made crust (I suggest Boboli brand) helps you save time, and using some spaghetti sauce is absolutely fine too. I made the Chicken Veggie one for my girl friends when I had them over for a lunch. I made two pizzas and only 3 or 4 slices were leftover!

Since it's just me, I get the small personal size pizzas (2 in a pack) - that way I don't have too much leftover.

Chicken Veggie

(for one large pizza - about 8 slices)
Ingredients:
1 Boboli pre-made pizza crust
3-4 tbsp. spaghetti sauce (or regular tomato sauce)
1 cup of cubed cooked chicken (suggest the Oscar Meyer brand grilled chicken)
8 oz mozzerella cheese (buy the 16oz pack and freeze the leftovers if you like)
1 green bell pepper (finely chopped)
1 red bell pepper (finely chopped)
1 yellow bell pepper (finely chopped)
small can of artichoke hearts
small can of sliced black olives
small can of sliced mushrooms

Instructions:
  1. Bake Boboli pizza crust for 5 minutes and let cool a little.
  2. Spread spaghetti sauce.
  3. Layer chicken and veggies.
  4. Top with mozzerella cheese.
  5. Follow the rest of baking instructions for the crust.
Tip: If you broil the pizza after you've put all the toppings, you can melt the cheese faster and brown it a little bit so it crisps as well as the crust.

Mexican Pizza

Ingredients:
1 Boboli pizza crust
1/4 lb ground beef
2 tspn taco seasonings
one can of vegetarian refried beans
2-3 tbsp mild salsa
shredded lettuce
shredded cheese (Mexican blend)
1 or 2 tomatoes (finally chopped)
small can of sliced black olives
sour cream
pinch of dried or fresh cilantro

Instructions:
  1. Brown the ground beef in a skillet, adding the taco seasonings when the beef is half way cooked.
  2. When the beef is cooked all the way, add the refried beans and mix well.
  3. Spread mild salsa over pizza crust then top that with the beef-bean mixture.
  4. Bake pizza half way.
  5. Top pizza with black olives and cheese.
  6. Complete baking pizza.
  7. Top with lettuce, tomatoes, a dollop of sour cream and sprinkle cilantro on top.
